The BIG Haircut


So Emma wanted to cut all of her hair off.. we did this probably about 3 weeks ago. She had been asking me and asking me to cut her hair short just like the girls in her class at church. And it got to the point that she wouldn't let me do anything with it. I would have to bribe her big time to even get it into a ponytail and then she would just complain all day about the pony tail. So we cut it. I took her to one of those kid salons so she got to sit in the Barbie jeep! She loved it. To this day I say to her "Emma do you miss your long hair at all" She always says " No mommy I love my short hair." Look at all the long pieces of hair on the ground!!!

Creamy Chicken Lasagna

So if your looking to switch things up a bit. I recommend this chicken lasagna! We loved it. I really like normal lasagna.. but my wonderful husband does not like red sauce. So I tried this and he liked it. Anyways.. I cooked some chicken breast in the crock pot and then shredded it and it worked out great!



12uncooked lasagna noodles (12 oz)
1tablespoon butter or margarine
3/4cup chopped green bell pepper
3/4cup chopped onions (1 1/2 medium)
1/3cup milk
2cans (10 3/4 oz each) condensed cream of chicken soup
1/2teaspoon dried basil leaves
1/4teaspoon pepper
1container (12 oz) small-curd cottage cheese
3cups diced cooked chicken
2cups shredded mozzarella cheese (8 oz)
1cup shredded Cheddar cheese (4 oz)
1/2cup grated Parmesan cheese
1.Heat oven to 350°F. Spray bottom and sides of 13x9-inch (3-quart) glass baking dish with cooking spray. Cook and drain noodles as directed on package.
2.Meanwhile, in 2-quart saucepan, melt butter over medium-high heat. Cook bell pepper and onions in butter, stirring occasionally, until crisp-tender; remove from heat. Stir in milk, soup, basil and pepper.
3.Place 4 noodles in baking dish. Top with about 1 cup of the soup mixture, half of the cottage cheese, 1 1/2 cups of the chicken, 2/3 cup mozzarella cheese and 1/3 cup Cheddar cheese. Repeat layers once, starting with noodles. Place remaining 4 noodles over top. Top with remaining soup mixture, mozzarella cheese and Cheddar cheese. Sprinkle Parmesan cheese over top.
4.Bake uncovered 50 to 55 minutes or until bubbly and hot in center. Let stand 15 minutes before cutting.
High Altitude (3500-6500 ft): Bake 1 hour to 1 hour 5 minutes.
